Keeping up with SQL Server patching can be time consuming - but worthwhile . There are different types of patching:
Service Packs - which generally is the minimum level for versioning
Cumulative Update - include bug fixes etc - but are more of a general catch up - and not necessarily part of the version timeline
Security Patch - Released as necessary.
I usually focus on Service Packs & Cumulative Updates. Cumulative Updates include Security Patches.
The latest Cumulative Update for SQL Server 2016 SP1 is available as number 5.

In another post I'll write about automating the SQL Server patch updates for hundreds of servers. But a word of warning - I'd never attempt to update all in one go, roll them up in manageable batches
